Movies By Moonlight...
Well, we have officially had our first "Movies by Moonlight" of the season! It was a beautiful day yesterday. High 70's. I got the lawns all mowed so that when we laid out our sleeping bags, etc... we wouldnt get lost in the tall grass. Ü
You know... there is a NEW 'Indiana Jones' movie out! Well, my kids have not seen the first three yet. Our new neighbors have purchased the set and said that we could borrow them. Well, we decided that "Raiders of the Lost Ark" would be our first official movie of the summer! We told the Lee's to come over in their jammies and bring their sleeping bags!
It was a great night. The wind didn't even blow! which was a bonus! It got a bit chilly toward the end... but it was a lot of fun.
It didn't get dark until about 9/9:30 or so, so we listened to SHREK until it got dark enough to see the movie on the back of the house. FUN TIMES!
In honor of the event, I was craving carmel popcorn. I found this WONDERFUL recipe! MMmmmm! It was GOOD! I ate entirely too much of it! but what a treat!
INGREDIENTS:
1 Cup butter
2 Cups brown sugar
1/2 Cup corn syrup
1 tsp salt1/2 tsp baking soda
1 tsp vanilla extract
5 quarts popped popcorn
- Preheat oven to 250. Place popcorn in a very large bowl. In a medium saucepan over medium heat, melt butter.
- Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
- Place in two large shallow baking dishes (i used two cookie sheets) and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.
